This is another spin on a recipe I saw floating around Pinterest and decided it was finally time to try it. Normally, I love dishes that have some sort of sauce but this was pretty good with just a little olive oil and seasonings.
There are a number of varieties that can be used for this recipe. I used red potatoes, chicken and fresh green beans with homemade ranch seasoning. I found the ranch seasoning recipe here: Ranch Seasoning Recipe
This is a great recipe to eat while on the 14 day max phase of the Advocare 24 Day Challenge! The leftovers were pretty great too!
3 chicken breasts, cut in half
3-4 small to medium red potatoes, diced
green beans, cleaned & ends broken off
extra virgin olive oil
Ranch Seasoning Mix Recipe
1. Preheat oven to 375 degrees. Spray a 13×9 pan with non-stick cooking spray.
2. Prepare your ingredients as listed above. Place green beans on one side, chicken in the middle and potatoes on the the remaining side.
3. Evenly spread ranch seasoning mix recipe on chicken and potatoes. Drizzle olive oil over all ingredients.
4. Cook for one hour. Check to make sure potatoes are cooked to desired level of tenderness. Enjoy! Simple as that! 🙂
