Cauliflower Pizza Crust Review

First, I want to point out that I am not the biggest fan of cauliflower. I am NEVER saying to myself, “Man, I am really craving some cauliflower!” I never eat it out of the vegetable trays at parties. I don’t add it to my veggie pizza appetizer. It is not a staple in our home. But I do love healthy alternatives & cauliflower has blown up! Cauliflower mashed potatoes, cauliflower pizza, cauliflower buffalo bites, you name it, cauliflower can do it.

Pizza is one of my favorite foods but it is not the best for my abs so I was so excited to find this recipe on The Lucky Penny Blog http://www.theluckypennyblog.com/2013/02/the-best-cauliflower-crust-pizza.html

I followed the recipe & had a few issues:

  • My cauliflower was not powdery like snow
  • I had a really hard time getting the water out….but my pizza wasn’t overly chewy
  • I had to cook for double the time suggested (18 minutes!)
  • Next time I would prefer not to have to use so much cheese

That’s a slice of my cheese & sauce only pizza. The crust did taste really flavorful but it did take a significant amount of time to make (around 30 minutes prep work). If you are curious and have the time to make it I would give it a try. My 3-year-old daughter did not like it. She thought it “tasted funny.”

With that being said, I think this is definitely a recipe that with practice it would taste better and better.
